The IBAI Bar

The bar is a space where the traditional “pintxo” culture is elevated to a higher level, reinterpreted through Paulo’s unique vision and understanding of gastronomy. Starting from a profound respect for Basque tradition and the flavors that define our culinary heritage, we seek to evolve the classic pintxo with a contemporary perspective, taking care of every detail without ever losing its essence.
