The IBAI Bar

The bar is a space where the traditional “pintxo” culture is elevated to a higher level, reinterpreted through Paulo’s unique vision and understanding of gastronomy. Starting from a profound respect for Basque tradition and the flavors that define our culinary heritage, we seek to evolve the classic pintxo with a contemporary perspective, taking care of every detail without ever losing its essence.

The product always takes center stage. We work with the highest quality raw materials, selected daily and treated with the utmost respect to ensure every creation reflects its true authenticity. Our bar offers an informal gastronomic experience, designed for relaxed enjoyment—whether standing or on a stool—yet maintained with the same level of excellence, technique, and care that defines the rest of our kitchen. It is a close and spontaneous way to experience gastronomy, where tradition, product, and well-understood simplicity meet.
